There is no question in my mind, that a full custom 1911, built by a skilled pistolsmith, is a much better firearm than a production pistol. But, the production gun may be "good enough" for your requirements.
My first custom 1911, from a "name" pistolsmith, that I commissioned as a retirement gift to myself 16 years ago, is approaching 100K rounds fired and is as functional, accurate, and good-looking as the day I took posession. And, no broken parts, or returning to the factory for repair. And, it will still hold 1" 5-shot groups @ 25 yards from a sandbag.
I doubt if a production 1911 can match any of that.
Except for cost and wait time, why wouldn't you want a custom pistol?
